Nevermind, it looks like this is already the case and @Corjan had already made the transition for the Bridge service being switched to the proper platform and running location
this seems only a previous install which is laying in "C:\Program Files (x86)\FS2020BridgeService" folder
I apologize for this wrong assumption !
So, there's some additional issue to track further on stutters side

Hi,
Yeah, has to make it 'Any CPU'. 32 bit doesn't make any sense anyways.
People have made the stutter very aware at asobo . Since it is the only way to communicate with the sim, all external programs face the same issue:

I think Editors should really take care of new revision in DataTypes made by Asobo/MS, this part could be missed if we don't and may trigger some unwanted issues or unexpected values read/write :

Simvars.exe, a viewer for the FS2020 Simvars. It is Here: FS2020 SDK\Samples\SimvarWatcher\bin\x64\Release

There's plenty of .simvars sample files that can be loaded from "\MSFS SDK\Samples\SimvarWatcher\Simvars"
I've seen that even their SimvarWatcher tool is concerned by the stutters issue, so wait and see for additional fixes around SimConnect

I'm experiencing at the moment the Frequency slider tuning using the SimvarWatcher tool, which is in fact the rate at which the tool will read Data from the Sim through SimConnect
it looks like lowering this setting full to the left, makes the Flight Simulator itself more responsive, it could be a good start point to keep in mind for further developments
