Can I use a Pi Zero W? If so how do I give it wifi credentials?

You can, but you'll have to use USB OTG to get into it. There's most certainly a lot of information online that explains how to do it.
It's not a very powerful board though, it won't do full-HD.

Thank you. I was thinking of using it with a small screen as an altitude alerter.

probably easier then to just buy a pi 4 :)
