To the joystick question: If I'm flying a simple 6-pack, then yes, there's ample opportunity to let the sim software handle key/joy events. The problem is one of avionics complexity: In this case Avidyne and Garmin G1000. I'll speak only to the Avidyne system as it's the one I'm most familiar with....
